Garlic Potato Packets
Ingredients
- 1 1/2 lb potatoes
- 3 oz butter
- 2 cloves garlic
- 1 branch fresh parsley or coriander
- Lemon juice
- Tabasco
- Salt and pepper
Method
Boil the scraped potatoes in plenty of salted water until the tip of the knife meets a little resistance when inserted in the center. Drain, and when cool enough, slice the potatoes into 1/4 inch pieces.
Chop the herbs and garlic finely and mix into the butter adding a squeeze of lemon juice, Tabasco and seasoning to taste.
Divide the potato slices between the sheets of foil and top with a spoonful of garlic butter.
Gather 6 sht foil (about 12" square) together to form bundles, keeping the gathered end uppermost, and cook over hot coals for 10 minutes.
